Potato, Ham & Chicken Creamy Soup
Another day of quick & enjoyable cooking time, it was raining all day, quite cold. So I felt having the hot soup, and this is so easy to throw in extra leftover veggies from my other meals :P like celery, carrots, onion & some chicken.

Prepare time : 15 mins Cook Time : 25 Mins Serving : 6-8
Ingredients :
{for veggies} can be more or less each / up to you like:)
- 3 cups of small cubed white Potatoes
- 3/4 chopped White Onion
- 3/4 chopped Celery
- 3/4 chopped baby carrot
- 2 large sliced of Ham ( or sausages would be great too)
- 7 oz / 1 pc of Chicken breast, cut small or thin sliced
- 1/2 unsalted butter
- 2 teaspoons of olive oil
- 1/4 cup of flour ( i use all purpose)
- Chicken stocks (1 lg. container box)
- 3 cups water
- Salt, Black pepper, Basil herbs, I also use some soy sauce
- 1 small can of Carnation Cream
Steps :
- Bring Olive Oil & Butter to the Large Kettle / Pot with High Heat
- Place all chopped onion and Chicken & Ham and Soy sauce - until cooked well
- Combine carrots, potatoes, celery, simmer for 10 mins to soft
- Add slowly Flour while stirring
- Start adding Chicken Stock and water
- Bring the higher heat until potato very soft - I keep stir & push down potato to break, then you would see the soup gets thicker.
- Spice with salt, Black pepper
- Gradually mix carnation cream and mix well
- leave on low heat another 10 mins
- Add basil Herb the last
*some recipes, they mix with some cheese, but I don't have and really like much. This recipes is also taste like chowder and thick as creamy enough, but you can try to add , also at the last step.
