CUPCAKES { as-you-like }

It has been for a long while that I haven't published my blog. And now is May already ! so let my first post be the sweet stuff <.<'   "CUPCAKE"

Since I moved back to my hometown, I couldn't find the great cupcake shop where is close to my house, even though some places around... So here I am, starting to bake them again--- today I tried my 2 favorite favor ones  !!!


  • Red Velvet Cupcake with Cream cheese Frosting
  • Vanilla Cupcake with Strawberry favor Cream cheese Frosting

Vanilla Cupcake with Strawberry Cream cheese frosting


Vanilla Cupcakes { ingredients }

  • 1 1/2 cups All Purpose Flour
  • 1 cup granulated sugar
  • 1 1/2 Tsp. Baking Powder
  • 1/2 Tsp. Salt
  • 1/2 Cup Sour cream
  • 1 1/2 Tsp. Vanilla Extract
  • 8 Tablespoons ( 1stick) Unsalted Butter, room temp.
  • 2 Lg. Egg Yolk  & 1 whole Egg, room temp.
Directions:
  • Adjust your oven rack/ Line muffin tin with paper liners / Heat oven 350 F
  • Whisk -- Flour+baking powder+ Salt+ with Standing Mixer / Add Butter+ Sour cream+ Egg& Yolk+ Vanilla Ext. / Beat-- Med. Speed until smooth about 30 seconds/ then Mix by hand until smooth.
  • Divide the batter evenly each cups/ Bake  about 20 minutes / toothpick inserted and dy&clean
  • Remove cupcake from tins/ Cool them to room temp. Set on aside.
FROSTING { Cream Cheese }
  • 2 cups pf powdered sugar or confectionary sugar
  • 4 oz of Cream Cheese (soft) / 1 pack
  • 2 tablespoons Unsalted Butter
  • 1 Tablespoon Milk
  • 1/2 teaspoon of Vanilla Extract
  • STRAWBERRY PRESERVE/ JAM or syrus, for the Strawberry Cream cheese frosting
** Whip all ingredients into bowl mixer & until well combined or a thick frosting.


RED VELVET CUPCAKES WITH CREAM CHEESE FROSTING
  • 1 1/4  Cup of All Purpose Flour
  • 2 tb sp. Cocoa Powder
  • 1 Teaspoon Baking Powder
  • 1/4 Teaspoon Salt
  • 1/4 Cup pf Unsalted Butter, room temp.
  • 3/4 Cup of Granulated sugar
  • 3/4 Cup of ButterMilk
  • 1 Egg
  • 1 Teaspoon of Vanilla Extract
  • Red food coloring (add until red you like)
Directions:
  • Preheat your oven to 350 degree/ Line a muffin tin/ with paper Liners
  • Add sugar & butter & cream together, Add egg & vanilla Ext. - mix until creamy in electric bowl mixer
  • then, run mixer low, half of flour+soda powder+ salt+ cocoa & half of ButterMilk ---- combined well and add remaining all drys & buttermilk/ Make sure not over maxing
  • Add Red coloring as desired
  • Using Lg. ice cream scoop, evenly in muffin tins/ Bake for 20 mins untill toothpick inserted comes clean/ leave side untill cupcakes cool.
  • Frosting with the cream cheese that already mixed ( leave in frig. while  making cupcakes and waiting for them cool.
