This Sunday, my Birthday is coming, being older seems to make me thinking more positive and stay peaceful :) I wanted just to celebrate quietly and simple with my hubby. I also felt to bake more and cook my own meal. I decided to make cupcakes twice this week then ! first is here "Chocolate-espresso ones.
Ingredients:
- 1/2 cup (1/2 stick) unsalted Butter (room temp.)
- 3/4 granulated Sugar
- 1/4 brown sugar
- 1 egg (whole)
- 1 cup All purpose flour
- 1/2 Teaspoon Instant espresso powder
- 1/2 cup Cocoa Powder
- 1/4 teaspoon Salt
- 1 teaspoon Baking Powder
- 1 teaspoon Vanilla Extract
- 3/4 Buttermilk
Directions:
- Preheat oven 350 degrees, line up paper liners
- Combined dry ingredients in a small bowl-- flour+cocoa+espresso+baking powder+salt, set aside
- Mix &cream together butter and sugar, then egg +vanilla extract, whisk unitl smooth.
- Add dry ingredients for half first and mix until almost all incorparated, then the least and mix together. Add buttermilk, mix everything well. *but Don't overmix.
- scoop them in each muffin tins (I used small ice cream scoop)
- leave in oven around 20-22 mins or until the toothpick inserted comes clean. ( I normally turn the oven off a little sooner when the cupcakes are done but still not all the way-but let it bake in hot oven still)
Frosting:
- 1 stick (8oz) Unsalted Butter (room temp.)
- 2 1/2 cups powder sugar
- 1 tablespoon vanilla extract
* Mix all together well, start low speed gradually add powder sugar, and then increase the speed to med. high until cream light & fluffy (around 2 mins)
** I decorated them with chocolate pretzels.
