continued cupcakes weekend fun :)
I tried to combine 3 recipes of vanilla, red velvet, and buttermilk to be easy one recipe - and added colors for pretty combinations. They come out very well mixed and taste a bit different, and softer, lighter and my regular cupcakes. I also wanted to try with whipped cream and my homemade strawberry jam.
(You can also serve them with a scoop of ice cream too....) Here is my recipes
* Vanilla buttermilk
** Red velvet buttermilk
*** Blue buttermilk
Ingredients of *
- 1 1/2 All purpose flour
- 1 1/2 teaspoon soda powder
- 1 cup granulated sugar
- 8 oz tablespoons unsalted butter
- 1/2 teaspoon salt
- 1 1/2 teaspoon vanilla extract
- 1 whole egg and 1 egg yolk
- 3/4 cup buttermilk
Ingredients of **

- 1 tablespoons Cocoa powder
- Red Food coloring (add until red you like)
Ingredients of ***
- All ingredients *
- Blue Food coloring , just 2 small drops for light blue
Directions:
- Preheat 325 F oven and line muffin tin with paper liners
- Whisk sugar and unsalted butter until cream together well, then add all dry ingredients --flour,soda powder,salt, beat with med speed untill smooth, and add egg+yolk+buttermilk, vanilla extract.
- After all incoporated well, scoop evenly to 4 muffin tins ( divide other 4 for red velvet and last 4 for blue buttermilk ones)
- Put in oven around 20 mins
